Miracle Chili
Ingredients
- 48-ounce can V-8 juice (spicy is preferred)
- 2 10 1/2-oz. cans Mexican-style stewed tomatoes, drained
- 1 medium yellow onion, sliced
- 2 stalks of celery, chopped
- 3 tablespoons chili powder
- 1 12-ounce package mixed frozen vegetables (broccoli, carrots, water chestnuts, red pepper mixture)
- 1 16-ounce can kidney beans, rinsed drained
Directions
Combine V-8 juice, stewed tomatoes, onions, celery and chili powder in a large soup pot. Bring ingredients to boil and reduce heat. Add vegetables and beans, stir and simmer for at least 10 minutes.
